🥗Simple Grilled Sockeye Salmon with Basil Pesto

This is one of my go-to salmon recipes when I want something healthy, flavorful, and uncomplicated. It’s made with a few pantry staples, cooked on the grill, and finished with basil pesto for a fresh, satisfying meal without excess.

Ingredients

  • Sockeye salmon fillets (2–3, skin-on)

  • Olive oil

  • Dried basil

  • Dried oregano

  • Paprika

  • Fresh lemon juice

  • Basil pesto (store-bought or homemade)

  • Aluminum foil

Instructions

  1. Preheat the grill to high heat.

  2. Tear individual sheets of aluminum foil and place the salmon fillets skin-side down on each sheet.

  3. In a small bowl, mix olive oil, dried basil, oregano, paprika, and fresh lemon juice.

  4. Spoon the olive oil mixture evenly over each salmon fillet.

  5. Place the foil packets directly on the grill and cook for about 15 minutes, until the salmon is cooked through and flakes easily.

  6. Remove from the grill and transfer to plates.

  7. Spoon basil pesto over the top just before serving.

Notes

  • This pairs well with simple sides like roasted vegetables, a green salad, or quinoa.

  • Cooking the salmon on foil keeps it moist and makes cleanup easy.

  • I like adding the pesto at the end so the herbs stay fresh and vibrant.
